Sky knows, wind knows, trees undoubtedly know, children and apples -and pears- and floral bouquets all point to you. Early this morning, I peeked out my kitchen window and smiled as I watched little ones walk back to school. Welcome, autumn.
Preheat oven to 176C/350F. Slice pears in half and scoop out center. Use your favorite variety or whichever available. If pears don’t sit flat, slice back thinly, and if possible leave the stem intact, just looks prettier. Fill center with chopped walnuts, top with crumbled Gorgonzola. Place on baking sheet and bake for about 15 minutes or until a little golden. Gorgonzola melts quickly, so you don’t want to over-bake this. If cheese melts too much, you may add extra after removing pears from oven. Serve topped with additional nuts, a drizzle of honey and a sprig of thyme.
