My little countertop oven bell rang, and out came this sweet loaf pleading to be served with no less than all that I know to be the purest essence of Christmas …simplicity.

Banana Loaf
Ingredients
- 250 g all-purpose flour (2 cups)
- 2 teaspoons baking powder (not soda)
- 1 teaspoon salt
- 175 g unsalted butter softened (12 Tablespoons)
- 2 large eggs room temperature
- 1 teaspoon vanilla extract optional
- 4 ripe bananas
Instructions
- 1. Preheat oven to 176C/350F.
- 2. Butter an 21.5 x 11.5 cm (8 1/2 x 4 1/2 inch) loaf pan generously.
- 2. In medium bowl, whisk together flour, baking powder and salt.
- 3. In large bowl, using an electric hand mixer, cream together butter and sugar 4-5 minutes or until light and fluffy.
- 4. Add eggs 1 at a time, mixing between each. Mix in vanilla if using.
- 5. Add mashed bananas, mix well scraping bottom and sides.
- 6. Add flour folding in with spatula until all combined.
- 7. Bake 60-65 minutes, edges deep golden and wooden skewer Inserted in middle comes out clean. Top as you like, but it’s delicious plain too.
