The warmth and goodness of this magical season, serving myself double this year, maybe even triple,
starting with another favorite recipe, harvest wild rice soup.
Simply scrumptious.
Harvest Wild Rice Soup
Ingredients
- extra virgin olive oil to taste
- 1 large onion yellow or white, chopped
- 2 carrots medium-large, chopped
- 3 celery stalks chopped
- 100 g mushrooms favorite variety, sliced
- 3 garlic cloves minced
- 2 L vegetable stock homemade or store-bought (see notes)
- 195 g wild rice prepared separately (see notes)
Optional
- 250 g turkey breast precooked, chopped
- additional veggies of choice
- additional herbs such as thyme
Instructions
- In a large stockpot, over medium heat, heat a generous drizzle of olive oil, add chopped onions, carrots and celery, sauté until onions are translucent, 5 minutes or so.
- Add mushrooms and garlic, sauté for additional 5 minutes or so.
- Add precooked turkey breast (if using), salt and pepper to taste, choice of additional herbs, combine.
- Add stock, cover and simmer on low 15-20 minutes, longer depending on other veggies you may wish to add.
- Meanwhile cook rice separately. Some recipes call for cooking rice together, but I prefer separately.
- Once rice is tender, add to turkey and veggie stockpot, stir and simmer on low for additional 8-10 minutes for rice to soak up flavors. Adjust salt and pepper to taste.
- Serve with homemade whole grain garlic bread croutons.
Notes
Additional vegetables such as kale and butternut squash go great with this soup. You can’t go wrong adding more veggies and stock to this recipe, so measurements can vary to your choice.
Making vegetable stock ahead is a great option, but using pre-made store bought is also fine. I’d only suggest unsalted.
I used a parboiled and wild rice mix. Choose your favorite rice, but best longer grain, not too starchy.
