Summer Garden Potato Salad
Ingredients
- baby red potatoes boiled
- pitted green olives halved
- sun dried oil-packed tomatoes drained and chopped
- capers to taste use brine to soak potatoes once boiled
- red onion thinly sliced
- fresh dill to taste
- choice of white variety cheese such as mozzarella, avoid any too salty
Dressing
- olive oil
- vinegar whichever preferred
- minced garlic
- dried oregano
- black pepper
Notes
With capers and olives there’s no need for salt, but adjust as you prefer.
